BLUEBERRY COLLAGEN MUFFINS

Ingredients

  • 1/3 cup of Caster Sugar
  • 1/3 cup of Almond Milk
  • 1 tbsp of Daily Naked Collagen Powder
  • ¼ Coconut Yoghurt
  • 1 Flaxegg (1tbsp flaxseed + 2 tbsp water)
  • 3 tbsp Olive Oil
  • 1 cup Gluten Free Flour
  • ½ cup Frozen Blueberries
  • Pinch salt
  • ¼ Vanilla Extract

Instructions

Pre Heat the oven to 190 and prepare your muffin tray. In a bowl stir flour, sugar, Daily Naked Collagen and salt together until combined, then add Almond milk, coconut yoghurt coconut oil, vanilla extract, and flax egg. Whisk together using an electric mixer until smooth. Once combined add in frozen blueberries and fold until evenly distributed.  Pour batter mix evenly into your preprepared tray and bake for 20mins or until slightly golden!
