Choc-Banana Collagen Blondies

These blondies are dense, decadent and so moorish it will be hard to stop at just one!

And I bet you wouldn't even know they're gluten free!

 

You will need:

3 small, overripe bananas, mashed

1/2 cup natural peanut butter

1/3 cup coconut sugar

1/4 cup Be. Collagen powder

1 cup almond meal

1 cup buckwheat flour

2 tsp baking powder

1 tsp vanilla extract 

Pinch of salt

1/2 cup choc chips (plus extra to sprinkle on top)

 

Preheat your oven to 180℃ and line a small 20cm baking dish with baking paper.

Combine all the ingredients in a large mixing bowl (except the choc chips) and mix well. 

Fold through 1/2 cup of the choc chips and spoon the batter into the prepared dish. Sprinkle with some extra choc chips. 

Bake for 30-35 minutes until cooked through and golden brown on top. Leave to cool and then slice up and serve.
